Our Story

POP Mustards is a collaboration between Michael Januska of award Winning Old Brooklyn Mustards & James Beard award winning Iron Chef Michael Symon.  

 

 

Michael Januska is truly a master of mustard.  His desire to find a mustard to complement the cheeses he produced for his Cleveland cheese shop, Old Brooklyn Cheese Company led him to create a mustard that had contrasting textures and flavors. The use of whole seed mustards lead him to the style of mustard with the POP that Januska could not find available to him. This lead to more mustard blends with clean, big flavors that are explosive in texture.  “Once people taste POP Mustards, they instantly realize it is unlike any other mustard they have ever experienced

Michael Symon’s love of mustard runs deep as has his desire to find and produce the perfect mustard.  Once he tried Michael Januska’s mustards it was love at first bite.  He knew immediately this was someone he wanted to work and create with and POP was born.

Why we POP 

What makes our mustards so special is the magical texture you get in every bite.  Texture is the under rated element that every great chef adds to his their most successful dishes.  We wanted a condiment that would do the work for you and POP was born.  Through using hand selected mustard seed blends & careful handling and fermentation we have created a mustard that will elevate the simplest of dishes like smoked turkey sandwich or make you look like an iron chef when you use it to top your steaks, fold into a butter sauce with lobster or take your favorite salad dressing to new levels.

 

POP Mustards are produced in Cleveland, OH. We have recently fully automated our production lines with the capacity to increase our output, as the business grows. We barrel age all of our whole seed mustards. Our mustards are crafted using different processes that set us apart from the rest.  We ferment, natural wood smoke, pickle, brine and infuse to create truly unique mustards.
